Eggplants

Yum, yum! This year we’ve planted in our garden tomatoes, eggplants and green beans and this week we were able to pick them. These three are twice as big as my hand. Usually, I like to cut these in 1/2 thick slices, smear them with low-fat mayo, bread them Italian seasoning, add a little salt a pepper and pop them in the oven for at 400º degrees for 20 minutes. They are oh so good!

Okay… tonight…. gym. I’ve been very good the last two weeks heading to the gym after work and working out for about an 1-1/2 hours. 45 minutes of cardio and the rest is strength training. Size 8… must think of size 8…
