Prosciutto Mozzarella Panini with Fresh Figs

Thought I would share a quick and easy recipe with y’all today! I love this time of year because fresh figs are available at grocery stores. You have to, in your lifetime, try a fresh fig. Not the preserve kind or the fig newton kind, but a sweet fresh fig. You won’t regret it, I promise.

So, I have two containers of fresh figs. Instead of munching of them straight from the box, I wanted to make something… sweet & salty sounded just about right. I thought of this sandwich on a whim and it’s so simple to make!

Prosciutto Mozzarella Panini with Fresh Figs
2 slices of a good thick bread
fresh mozzarella
fresh figs

On one side, butter a slice of bread and place on the grill. In my case, it’s a George Foreman Grill. Don’t laugh… it works! Cut the mozzarella into thin slices. I like getting the huge mozzarella ball, get the kind that’s not swimming in liquid. It’ll make your sandwich soggy. Soggy = sad sandwich.

Next, layer on prosciutto, two pieces of it, then an even layer of fresh figs, also sliced. Close your “panini” maker and wait until the bread is a nice golden brown and the mozzarella is melted. Cut and enjoy!
